Garlic and Thyme Steamed Corn

Ingredients
  • 3 cobs or corn, husk removed
  • 2-3 cloves of garlic, thinly sliced
  • 5 sprigs of fresh thyme
  • 2-3 Tbsp butter
  • Salt and pepper to taste
Method
  1. Preheat oven or grill to 375°F.
  2. Place all ingredients on a double layer of foil big enough to wrap around corn and make a sealed package.
  3. Cook package for about 15 minutes or until corn is tender. Serve.

Mexican Charred Corn

Mexican street corn in your own backyard.
Ingredients
  • ¼ cup butter, softened
  • ½ clove garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • Salt and pepper to taste
  • 3 cobs of corn, husked
  • ¼ cup neutral flavoured oil
  • ¼ cup grated Parm, Romano, or crumbled Cotija cheese
  • Garnish: ¼ cup chopped cilantro, 1 lime, cut into wedges
Method
  1. Preheat BBQ to medium high, 375°F.
  2. In small bowl mix butter with garlic, paprika, chili, salt and pepper. This is known as a compound butter.
  3. Brush corn lightly with oil and place directly on grill, rotating occasionally, until tender and slightly charred, about 10-15 minutes. Place on plate.
  4. Slather compound butter on corn and sprinkle with cheese, cilantro and serve with lime wedges.
