Classic French Vinaigrette

From compound salads to simply dressed lettuces, this is my number one go-to salad dressing.
Ingredients
  • ½ clove garlic, puréed
  • 1 Tbsp Dijon mustard
  • 2 Tbsp white wine vinegar
  • Pinch salt
  • ⅓-1/2 cup extra virgin olive oil
  • Freshly ground pepper to taste
  • Optional: ½ shallot, minced
Method
  1. In medium sized bowl stir together garlic, mustard, vinegar and salt.
  2. With small whisk or fork, slowly whisk in oil to form a nice creamy emulsified dressing.
  3. Taste and season with salt and pepper.
  4. Stir in minced shallot.

Classic Caesar with a Twist

Everyone loves a good Caesar salad. Here is one with a simple twist perfect for entertaining. Break out the tequila!
Ingredients
  • 4 anchovies
  • 1 clove of garlic, roughly chopped
  • 2 egg yolks
  • 1 tsp Dijon mustard
  • 1 tsp worchestershire sauce
  • 3 Tbsp freshly ground Parmesan cheese
  • 2 Tbsp freshly squeezed lime juice
  • Splash, about 1 Tbsp, of tequila, or to taste
  • ½ cup approx. neutral flavoured oil (like grapeseed or vegetable oil)
  • Salt and pepper to taste
Method
  1. Place all ingredients except oil, salt and pepper into a blender or food processor. Pulse a few times to beak up ingredients.
  2. With blender or processor on, drizzle in oil to create a nice emulsified creamy dressing, adding more oil if needed to adjust consistency.
  3. Taste and adjust seasoning with salt, pepper, more lime juice, or tequila!
Tizz's Tips
You can serve this as a dip or a dressing by adjusting the amount of oil you add. Less oil will make a thicker dip for a veggie or charcuterie plate, more oil will create a looser dressing.

Super Creamy Oil Free Vegan Dressing

Yes, you can have a super creamy dressing or dip without adding ANY oil, eggs, cheese, and cream.
Ingredients
  • ⅓ cup water
  • ½ cup hemp seeds
  • 1 clove garlic, roughly chopped
  • 2 Tbsp apple cider vinegar (with the mother)
  • 2 Tbsp nutritional yeast
  • Salt and pepper to taste
  • 2 Tbsp freshly chopped oregano
Method
  1. In a blender or food processor add all ingredients except chopped oregano. Pulse or process until you have a nice thick creamy dressing. Add more water if necessary.
  2. Taste and adjust seasoning with salt and pepper.
  3. Transfer to bowl and stir in oregano.

What is nutritional yeast you ask?
This amazing dairy-free cheese alternative was introduced to me by my vegan friends. They love it because of its high vitamin B content. It looks like larger flaked grated Parmesan and has the slightly salty, nutty and melty quality of Parmesan. My kids love it so I can easily swap it for cheese in certain recipes. It also lasts longer than freshly grated Parmesan and is cheaper. Try it sprinkled on popcorn.
