Homemade Larabars
I like to skip the heavily-processed granola bars and make my own from scratch. These bars, a family favourite, mimic the well-known Larabar food bar. The sweetness comes solely from the dates and they’re packed with nut and seed proteins, essential fatty acids, and lots of flavour. These freeze really well so make a double batch!
Ingredients
- 350g raw almonds, coarsely ground
- 75 g sunflower seeds, coarsely ground
- 50 g sesame seeds
- 45 g ground flax
- 500 g pitted dates
- 1 tsp cinnamon
- 1 tsp pure vanilla extract
- Pinch of sea salt
Method
- Mix almonds and seeds together in a bowl.
- Using food processor, make a date paste by pulsing together pitted dates with cinnamon, salt and vanilla.
- Transfer date paste into large bowl, and start adding in your nut/seed mixture in 3-4 additions.
- Date paste is very concentrated and all the dry ingredients will get fully incorporated, it just requires some muscle on your part.
- Transfer into square baking dish lined with parchment. Press paste to form one nice even layer. A good sturdy spatula helps.
- Cover with plastic wrap and let firm up in refrigerator for a few hours or overnight.
- Cut into bars and store in refrigerator or freeze.
